"Graphic" comes from Greek "graphikos" and has always been pronounced like a hard G.

We're talking about an acronym, not a word in the English dictionary. When applied to phonetic understanding, pronouncing it with a soft G is perfectly acceptable.
Plus, the creator says it with a soft g, so whatevs.

The word that represents G in the acronym is pronounced with a hard G so I've always used Gif and not gonna stop.

Exactly, the pronunciation of the word graphic has nothing to do with the acronym gif. Saying gif sounds like someone with a lisp or retard trying to gift and failing.
