I use olive oil with my stainless, but everything else gets bacon grease, beef tallow, or duck fat.

I use avocado pretty exclusively now while cooking. It has a much higher smoke point when cooking when compared to olive oil. I do think olive oil has a better taste though.

Oddly enough, I ordered 6x3L cans from Masseria Salamina a couple weeks ago. Should be good for about a year.

Yup. Single origin California olive oil and honey that came from bees that are close enough that I could visit during a lunch break. I’m normally not terribly picky about staples like that, but there’s just too much frickery that goes on in those two industries.

Even if it is 100% olive oil, especially the cheaper stuff is often dregs from old harvests and even rancid when bottled.
