Depends on the vacation. When we go to the Florida Keys we have no itinerary. But we have gone many times and basically know what we want to do. We just let it play out based on how we feel each day and what the weather is doing.
However yesterday I spent 3 hours laying our entire Iceland trip out on a spreadsheet. We are spending 10 days driving around the entire country. There is so much to see that I felt like we needed a plan to with, I’m sure we will end up deviating from it quite a bit but I wanted something to start with.
A few years back we went to Arizona and spent time in Sedona and Red Rock and then up to Page and worked our way around the South rim of Grand Canyon and ultimately ended up in Vegas for a few days. Other than preplanning our hotels for each day and purchasing in advance what shows we wanted in Vegas, we really didn’t have any itinerary.

My wife loves and itinerary on vacation and will plan out every second if I let her. Our solution is I make her put in blocks of time where nothing is scheduled. "Indecision is the key to flexibility...."

Depends. Beach...no
Europe, somewhat.
But having to wake up, walk with a group, be here, be there at certain times, is not a "vacation", its a tour.

I think an actual "legit" itinerary like you'd get checking into a work conference or something sounds like hell. The only itinerary we ever have on vacaiton is somethign like "we wanna see [thing] one day, and [other thing] at some point. Dinner at [place] one night". Just very loose things we wanna check out but certainly not an hour by hour schedule of activites.

I have a packing list to make sure I don't forget anything, but no itinerary.

You need some type of outline. But an itemized hour-by-hour itinerary, no way. The only thing I devote dedicated time too is planned meals.

Without some semblance of a game plan you will just waste time and opportunity. If sleeping in till Noon is your idea of a vacation why go anywhere? Stay home, sleep, save money.

Wife and I are both “let’s wing it” type people. Not only in everyday life but even more on vacation. Not saying that’s a good thing but that’s how we roll

The worst is arriving at a dream destination that you will only visit once in your lifetime and realizing you needed to book a ticket in advance to experience everything you wanted to see

If I’m doing a National Park, I plan a hike per day, and locations to stay. If going to various cities or the beach, the GF plans stuff. I can’t stand the idea of being in a new place and not exploring. We find places to eat on the fly.

Very rarely.
For the most part like a beach, Disney or hiking then absolutely no itinerary.
But we're going to Italy in the fall and we're spending few days in Rome, Venice and then traveling to Switzerland. I'm making a loose itinerary just so we don't rush and we get to hit the major things we want to see.
Like we're doing 1 day at Vatican and St Peter's. Then another day doing history like the coliseum and pantheon.
I don't want to get there and then realize they have tickets and tours and shite that I had to book.
