My FIL is just like Clark Griswold when it comes to itineraries. Every minute is basically mapped out when he goes on vacation.

Depends - Going to New York or Paris or something like that, yes. So more of a city vacation.
Going to the beach or lake, then hell NO.

Full blown itinerary for me, but the it’s filled with plenty of time of “do whatever” too.

We just did Napa. Every single winery I had booked had signs that said “absolutely no walk-ins” and many had been close to sold out (limited openings) when I booked them 2 months in advance.

Certainly couldn’t have walked into most dining I had reserved far in advance either.

Some places just don’t allow for “do whatever” unless you are flying all the way there knowing you won’t get the best of what they have to offer and you’re fine with that. I’m not.

We usually have an idea or list of things we would like to do but nothing set in stone.

Sometimes we get everything on the list sometimes we don’t. Sometimes we find something cool that was unexpected/unplanned and the list of things to do changes.

It is vacation so in general we don’t stress about being certain places at certain times
