Is Mexican food basically just a bunch of sandwiches with different types of bread?

I mean, what's really the difference between a burrito, taco, fajita, taquito, chimichanga, enchilada, chalupa, etc?
Just different sizes and types of breads. In some case the same bread... just fried in some cases and in other cases covered with a sauce.
Mexican is basically like going to subway in mexico.

My dad always used to say that all Mexican dishes are the same. Just arranged on the plate differently.

Well some are flour some are corn white corn
But you aren’t wrong. Tortas are technically the sandwiches. Many times the tortillas are used to scoop the food up so they not always eaten as a whole in Latin culture

Does he no longer say that bit of culinary wisdom?

You mean to tell me that a culture of people developed a certain taste to the region?! You're fricking telling me that egg noodles, squid, lasagna, and god damn M&Ms weren't available to them?!
Eta: seriously though. Watch Taco Chronicles on Netflix.

There’s also more and different meat at the taquerias such lengua (beef tongue) Barbados (bbq beef cheek), al pastor (seasoned pork usually with pineapple)
There’s also dishes/soups such as menudo (beef tripe) pozole (seasoned chicken) so tortillas are use in smaller pieces as a fork
There’s also cactus which is yummy

I mean, what’s the difference between gumbo, etouffe, jambalaya, creole, etc???? It’s all just rice, roux, some veggies, and some sort of meat.

No bs, Mexican places have the BEST burgers. Must be that griddle they use all seasoned from other things.
I’m being serious, if you like burgers, try one at a Mexican place.
