Chilaquiles might be the best hangover food possible. Especially when paired with menudo.

I do know there are no hard shell tacos in real Mexican food. And they hardly ever use ground beef like we do here.

Mexican is the new Italian. Cheap, fast, easily replicable and teachable.

NOTE I'm talking about the US, NOT real Mexican and REAL Italian (because people will jump in here talking about Mole and Italian slow cooking and things in line with Spain).

You know, one of those enterprising Mexicans should open up a good place in Guntersville. The locals might not give a shite, but all the ballers who come to visit in the summer would eat it up. G-Vegas has a dearth of good eating options.

Ya, that surprises me to this day that there hasn't been a boom of artisan, craft, etc. shite there with all the money being dumped in to houses/land around the lake from Huntsville and B'Ham.

If you're talking about shitty Americanized Mexican food then you're absolutely correct. I laugh every single time people here in Natchitoches argue over which of the 6 shitty Mexican restaurants is better than the other shitty Mexican restaurants.

Yes, he is. Different regions of Mexico have vastly different foods. As does Italy. He's just used to "American" Mexican food.
