If you want real Mexican food in Alabama then you have to go to Montgomery. Troy highway has numerous mobile home parks that are all basically Mexican. Some have opened restaurants that serve real Mexican food. Most of the customers are American so the owners have to hire the young people who speak Spanish and English. The owners speak very little English and really don't understand what the American customers ordered. That's why they hire bilingual waiters.

Taquiera el cazador in Huntsville is very authentic. It's almost always all Mexican customers when I go in.
They serve beef tongue, pork cheek, and all shorts of stuff.
