Correct me if I'm wrong, but hurricanes usually strengthen to this point when high pressure is to their north. Once a hurricane starts moving more in a polar direction that's because the high pressure is gone, therefore a good part of the ideal conditions needed is gone.

It's a little more complicated but yes, generally when they get tucked under a high there isn't a ton of shear around and they get fully aligned with their main steering feature.
The water temperatures in the lower latitudes where this happens also is beneficial.
