IIRC 72 was the max on the APFT when I did it, I know it has changed now. I always did the max and not a single one more.
When I was in ROTC if you maxed the PT test you only had to come to PT training 1 day a week instead of 3 at the time for that benefit I was going to max every time!
I think max (for college age) was 72 PU (in 2 mins), 82 SU (in 2 mins) and 11:54 in the 2 mile run. I know it has changed since the 90s.

Im 33 and make it a point to max out the under 30 numbers

Only about 150 of this style. Regular ones became to easy for me.

APFT max PU's is 76 for me and I can knock that out in the first minute. Max APFT PU's using all the time is 105 or 109.

Used to be able to do 75 to 90 no problem back in my infantry days. I would probably max out in the 70's and more towards 80 with no rest with proper form.
It also depends on what you mean by "rest". I can add 8 to 12 if I am able to go to a front leaning position and hold for a few seconds or dip my torso a bit.
