You ever think that mother-in-law is drinking cause her daughter married a loser from Alabama? I'd drink if I was her. And if you're so concerned about your kid why let her alcoholic arse babysit for you? Oh, that's right...to save you an arse load of money.

Not trying to be a dick, but your post seems like it's filled with apologies. You seem like you honestly feel guilty about telling the MIL that she was out of control and your in-laws are playing it up to win the argument.
You seem like you felt bad trying to keep your kid from a woman too drunk to hold him. You should never have to second guess yourself on that, just tell her straight up that she's had too much and she needs to sober up before she can hold the kid.
That they're babysitting your kid is giving them leverage. I would look for someone else to watch my kid and take away their power. When they ask why, be straight with them. (But calm and kind.)
You and your wife also seem like you're dealing with some co-dependency issues. Your in-laws have problems and they make you feel guilty calling them out. I would recommend you and the wife get some counseling so you can get some tools to deal with their crap. You shouldn't have to feel guilty protecting your kid.
And while it's hard to do, you have to set some rules for your house and be straight forward with them. They have a problem and they're never going to fix it if you constantly accommodate them.

I'd drink too if I was an empty nester and my daughter married a loser who can't afford child care and I get stuck watching her rugrats three days a week.
