Again, not really. You don't launch, go to the Moon, brake, then leave lunar orbit.
I mean, sure, if you completely replicate all the manufacturing capacity of the Earth, including fuel production. Frankly, it would make more sense to assemble a large spacecraft in LEO than to build/launch something from the Moon.
The saying goes, "Once you're in low-Earth orbit, you're halfway to anywhere."
ETA -now you could use lunar gravity as an acceleration booster, but that would still be an Earth launch.

It’s the stated long-term strategy I believe. Not to launch from the lunar surface, but to eventually stage the actual vehicle going to Mars at a lunar orbiting station. The Earth launch would go to that staging station and the crew would transfer. It would reduce launch fuel and weight restrictions considerably.

Assembling in LEO and then moving to lunar orbit is, again, the plan as I understand it long term.

I get that you don't get it. It's understandable. It goes back to the Earth-centric mindset of the pre-Renaissance.
There is no delta-V savings to go from LEO to the Moon and then proceed on to Mars - certainly not from lunar orbit. As I said, there might be an appreciable (small but measurable) gain if you used a launch window that also allowed you to use the Moon as a gravity accelerator. However, there are so few Martian launch windows in any given period to probably not warrant such an application.
The science: In space there is minimal drag. Once you get to your cruising velocity, you are at your cruising velocity until:
1. You expend fuel to brake, or
2. You experience either acceleration or braking from being close enough to a large gravity well
Period. There...is...no...value...to...going...to...the...Moon...to...get...to...Mars. In fact, it would ultimately be much more costly for that single mission. As I've said, the value in the Moon is that it is a low gravity (and no atmosphere - not exactly the Martian equation, but good enough for training purposes) and much easier/cheaper/and safer. The fact you can grab windows for the Moon all the time. In a hypothetical rescue situation, you're just a few days away if the crew is stranded on the Moon (or in lunar orbit). It's months to Mars (in fact launch windows are about 2 years+ apart to Mars, while you get a Lunar window about once a month).
The delta-V budget from LEO to the Moon's surface is about 6 km/s (5.5 to 6), while to Mars it is about 6.4.
You would just pack more fuel and do a transfer burn from Earth to Mars and not muck around with lunar orbit. Just no value to that leg.

It’s not something I made up—that’s what NASA and Space X has said before that’s the plan.
You’re focused on orbital mechanics, and you aren’t wrong, but it seems like the entire system is more concerned with size and pre-staging and the supply chain than pure scientific efficiency. I’m also not an engineer or scientist so if I’m just otherworldly wrong then ok
LEO is cluttered as frick as it is.
But either way, if we’re going to go to Mars, we’ll need viable habitability. That knowledge isn’t going to come from anything we do on earth. Clearly practicing (at the very least) on the moon is going to be completely vital.

I 100% agree with this.

Apollo alone average 1% of the IS budget from the early 60’s to 1973. At its peak, it was 2.2 %, with NASA at 4.4% that same year. NASA today is at 0.35%.
It cost bucks to make Buck Roger’s. No politician is going to spend that type of money on going to the moon unless it involves national security.
