I often wonder how many bachelor degree required jobs actually require bachelor degrees. Seems like a lot of entry level work could be done by anyone with an above average intelligence.

A good plumber or electrician can make 50/hour. Even assuming 6 billable hrs per day thats 300/day, 1500/week, 75k/yr with 2 weeks vacation.
That is more money than well over half of college grads will ever sniff.

You're absolutely correct. There are a plethora of jobs that could be done by high school graduates with enough training and experience.
Organizations require bachelor's degrees simply because they can. They know they'll still get a flood of applicants, and in the current job market, they can still play those college grads $27,500 because someone will take it. There's so many college grads out there that the merit of a bachelor's degree has become diluted.
