Those days of trusting most folks to be honest are long gone.
The second he was handing it off to another person out of the goodness of his heart, but still paying him, I would have started looking elsewhere.

Yeah I would be pretty scared of a lien myself. It is different in different states, but I would be looking for a lien waiver with each pay request before I made payment.
Were there any modifications made to what the contractor bid on?
Also, now might be a good time to find out what insurance the contractor/subs have and their limits.

Yes there was, but that’s why I paid more money. It was agreed upon that would be it. Me worker and contact all agreed. Worker was the one that wasn’t getting paid what was promised from person I was paying. When he realized he wasn’t making what was promised, he said he quit. I then found out why but contact didn’t tell me that.

Who actually hassled you, contractor A or B?
I built a house in 2000. The house was mine and I acted as the general contractor. EVERY SINGLE ONE of the subs came to me about 75% of the way through their portion of the job and said “man, I need to bump up my estimate. I didn’t bid this job right”. They didn’t bring out additional guys or materials. They spent no additional time over what was expected. They all tried to hit me up for some more money just to see if they could get it.
I had contracts and told them all to pound sand.

Contractor B. The original guy, found contractor B because he told me he was getting out and wasn’t doing that kind of work so contractor B agreed to price. Once it was to start he was bitching about price since day one. Told him his problem was with original contractor not me. Now that job is about done, worker hasn’t been getting paid what was told. I found out that was issue, instead contractor said it was worker not contractor. I know what was paid and what worker was paid. He has issue with contractor so was quitting and working for himself after this job.

Actually, this is my out. I was paying someone who had no hand in the work but was fricking over the worker, and me. Now the worker and I caught on to the issue.
Contractor then called me and said he would come do job himself. I told him no thanks, want professional like I had.

The title alone indicates your level of incompetence. You are asking ethical questions about a handshake deal you made with a CONTRACTOR! He duped you into paying without a contract in place. Ugh…stupid is as stupid does
