There a few restaurants in south FL that serve invasive Lionfish. It’s delicious but they are hard to catch. Basically spearfishing the reefs is the only way to get them.

My in-laws in south LA could feed an army with the number of nutria they kill in the marsh. They make a decent amount of camp money from the state for their efforts.

Aren’t those carp crazy boney? Making commercially fishing them not an option because they’re a massive pain in the arse to clean and filet?

A Thai friend who did field geology etc. during the Viet Nahm conflict told me he could tell when the hunter had only shot monkeys that day: the spices were really heavy to make it edible.
There are south east asian curries that could so hide the taste of Nutria, that the protein content would be welcomed.

Remember what "blackening" did to Red Fish.

Back in the day, we were at the Louisiana Pizza Kitchen near Essen @ I-10 and found nutria on the menu.

Supposedly, the state paid for the menu printing if the restaurant would offer nutria as an option.

The waiter said they had a package of it in the fridge.

When I duck hunted we shoot them when they swam thru the ponds. I usually would cut off the back legs and grill them. I thought it was good. Had a buddy would beg me to bring some home for him.
