As said, number of people living there should be the biggest factor. Also will you have frequent visitors, will you host much, etc.

If electric, a tankless heater requires a much much larger whole house generator versus a conventional tank water heater.
A tank heater can keep water hot for hours after electricity goes off.

A sub on my remodel talked me into a tankless gas on the other side of my house.
Installed a switch to transfer the gas heated water to the existing electric water tank in case power goes out. Couldn’t argue with that.

You do not need a 2nd tank, period. The number of times you all need to bathe at a similar time will be seldom...and years away. Don't make life this difficult.

Get 2 tankless gas.
I assume you have a dishwasher and a washing machine. It’s not just bathrooms that use hot water.

For 2 bathrooms and a 3-person family, the 50 gal is fine. I have 2.5 baths in my house now and rarely have any issues with my 40 gal.
Tankless are expensive, consume a lot of gas, require electricity to operate (loss of power means no hot water), have min flow requirements, heat input dependent on flow (more simultaneous users means lower temperature water), and are more expensive. They aren’t quite the “no-brainer” they are always made out to be.

2 120 ga water heaters. Never run out and can still be electric.

I'd get two so you don't have to ever worry about running out again. We have two - one near the two full baths and showers and one near the washing machine, kirchen sink and half bath. Works great.

Absolutely. On the front end a no brainer. Only thing we’ve put in our new builds last 4-5 years

Get two for a couple reasons. 1. Your family is growing. You will need more hot water later down the road. 2. For resale. People buying a home that currently have inadequate hot water supply might move along or ask for moneys back to install a second one at closing. 3. You dont want to wait for 30 seconds for hot water to come out the faucet due to the water heater sitting 50' away.
With that being said a couple questions for you as to the sizes needed. You might only need a 50 gal on one side and a 30 gal on the other. How is the house divided? What all will pull off the master side? Does master bathroom have a "soaking" or a large tub? Where is kitchen and laundry in relation to the other bathrooms?
Spend the extra money and get a second one. You wont regret it.

2 guest bedrooms and bathroom on one side, master bath and utility on the other.
