I know it seems exciting to be moving into a house with TWO bathrooms but remember that it isn't the bathroom that uses hot water, it is the people in the bathroom. If you aren't going to have a lot more people living in this fancy new two bathroom house than there were in the trailer then you probably won't need an extra water heater.

I have one either side of the house. One handles 2 baths and is smaller, the other handles 1 bath, laundry, and kitchen.

The key to proper hot water in a home is location and demand.

How is your home laid out?
Are the bathrooms near each other? Where is the kitchen? Where is the laundry room. You want to locate water heaters such that the wait for hot water isn't very long. Unless you go with a circulating system, location of the water heater/heaters is everything.

Pipe size is important. Run the smallest pipe allowed by code. You may want to run more 1/2" hw pipe to avoid running 3/4" hw pipe in places. 3/4" pipe is much larger in volume and takes longer to drain the colder way sitting in the pipe.

Then there's demand. If you go with tanks make sure your tank is large enough to fill up your tubs. Some have very large tubs which require over 40 gallons.

Consider size too if you want tankless heaters too.

I'd recommend gas equipment for hot water in most cases.

That's some general information, but without seeing your house plans no one can tell you exactly what's best.
