big enough that your mom has to be on top, but I think that's her desired position anyways

Go with two if you have a family or frequent visitors...nice to not worry about running out.

Just get a tankless water heater. Unlimited supply of hot water and it only heats when needed, so you won’t be wasting electricity or gas constantly keeping two 50 gallon tanks heated

Amount of bathrooms is irrelevant. The amount of people is what matters. If you have a teenager, get 3

if I were building, I would put in a couple point of use heaters. One in kitchen and any other sinks that are far from the big tank

Depends on who will live or visit the house. Teenagers are gonna run up the usage by beating off in the shower for a half hour and girls/women like to run the water while they shite so you can't hear them farting...luckily, they will eventually move off to college.

main reason I see to get multiple water heaters is to keep from having to wait so long for hot water to get from one end of the house to another.
