This is completely normal. We do this regularly, sometimes even earlier as soon as we put our toddler son to bed for the night at 7:30. There's days where I'm completely drained by then. Getting a good night's sleep is important for numerous mental and physical health reasons.

I'm not sure if you are into projects, but personally woodworking is magic for fixing my boredom. Mainly because there are instant changes (i.e. results). I build cornhole boards and sell them to coworkers and friends. Easy hobby that you can take pride in and you don't have to do during the day.

You should bang one of your exes friends just for fun. Make sure it’s a friend of hers who is much more attractive than your ex.

I often retire by 6:30 and am soundly asleep by 7:30 PM

Maybe find new hobbies? Experiment with something. Rock climbing? Do a "solo/group" thing like a rowing or fencing club (or other combat arts?).
That can give you some challenge a few nights of the week and give you something somewhat social.
Read. Read. Read. Before religion, I'd suggest Aurelius' Meditations. And then maybe a biography of someone in history you look up to. Washington? Teddy Roosevelt? Or maybe a St. Paul.

Find a place in the evening where you can do some volunteer work. Feed the hungry, help build a home for a family, coach a youth sports team....nothing on this planet feels better than helping out others.

This is very true. But the staying up late lifestyle isn't great, either, for us older folk. Your body lets you know when you are tired; like a kid, don't fight it. The rest will do good.
Here is a truly old lady post - if you are bored, after supper, find some really cool trinkets to build. Puzzles, wooden pinball machines, etc. They are ridiculously cheap. Even find something online that interests you, outside of the OT, boards about your interests, like cars, money markets, fishing, whatever. There are people (men) out there like you. They go to bed early and also have insomnia.

There's nothing wrong with going to sleep that early. If it becomes a regular thing you might want to lift in the early mornings.
I wouldn't say give up entirely on the online dating, but the fact is, most women are probably only there for the ego boost. Maybe try finding a decent spot close by you where you can go for decent bar food a couple times a week. That might not sound like much, but when I moved to a place where I didn't know anybody, a decent beach bar with a cool bartender to talk to saved my sanity.
