Life’s too short for me to be with anyone remotely crazy. Got my heart absolutely crushed by the same girl/woman who was crazy and it took the second round and a serious conversation with a licensed therapist to get me to comprehend that even if I loved her to the moon and back, her mental health issues were never going to allow us to be happy together like I always thought we should be.

Why not date her and just have fun? It probably won't last anyway, and you might be lucky if it doesn't.
If you're looking to get married or think about getting too serious with her however, you are presumptively an idiot. She's proven, quite early in life, that she has some serious issues being in a stable relationship and can't stick out a marriage which is supposed to be a lifetime commitment. TWICE in a short amount of time. You'd be stepping into that, and taking on responsibility for raising her two kids she had with someone else- her second husband. No thanks.
Re your cheating comment, "high likelihood that the military marriage ended due to Jody"- why do you say that? If that's what you think happened, you should probably just not bother with her at all, even to have fun. It's just too trashy.
