It does it when my foot has the clutch pushed. I spent yesterday in stop and go traffic on I-95. The engine shuts off when stopped with the clutch in. Let the clutch out and the engine starts up again.

Why would I ever be in fourth gear at 20 mph? That's just shifting up or down to second. I'm going to slow down for traffic on my own, not let the car decide. All that automatic stuff is getting turned off.

What if you accidentally left it in third, put your foot on the clutch and came to a stop…car dies…you release the clutch and it ‘starts’…I mean stalls?

Because the car slowed down due to traffic. Automated features that require you to shift to not kill the car seems crazy.
My manual has a cool feature that if I’m using cruise i can shift and it stays on. Crazy when you downshift, but a cool feature when passing…it’ll settle right back down to my cruise speed.

Nothing beats being a teenager learning the intricacies of manual shifting, high rev downshifts with a hot cam and a burbling sound almost as satisfying as your moaning girlfriend doing other new things you’re discovering.
Eventually you’ll learn how to rev match the engine and transmission, power shifting without using the clutch. Then, eventually rebuilding the clutch.
So satisfying running a manual and engine to their limits. I had just as much fun abusing a VW Beatle as later more powerful muscle and sports cars.

Learned to drive on a 4speed L82 1978 Vette. Clutch was like a tractor!

I think you're overthinking this whole thing. My MINI is a six speed manual, I drive it like one.

Old Beetles and Toyota trucks were very tough and although neither was remotely fast, you could wear them out and they could take it. Both were a lot of fun.

I got a 2024 manual arriving in a month or two...
Its just fun to drive them, guess that makes me some sort of man? OK fig. I will accept being masculine.
Electric cars are cool for that first burst of speed, its unreal, but after that they get pretty boring. I haven't been in a true performance EV though. The prospect of an AWD hybrid with a manual transmission sounds like a blast though, probably be the way I would adopt an EV.

Eh...I think it's the opposite.
Engine will auto shut off when the car is stopped with the clutch out (obviously in neutral). Engine turns back on once the clutch is depressed. This is how auto off/on works in my manual.
If the engine didn't start til you let the clutch out you'd stall every time. You can't let the clutch out in gear with the engine off and expect anything to happen (other than a stall).
ETA - And to be clear, I'm talking clutch pedal in/out. Not taking clutch in/out of gear. Thought that's what you were going for when you said "it does it when my foot has the clutch pushed"

I know I'm feeding right into what he's going for, but perhaps this is why he doesn't like manuals? Cause he can't drive one?
My wife and I have had standards as our every day drivers for a while, and I gotta say I'm really not familiar with this grating screech akin to nails on a chalkboard that he's talking about. With either her or me driving. I guess my wife is an alpha man that never botches downshifts too.
