I worked at Chilis as a line cook for 4 years when I was in college. It sucked when I worked prep in the mornings. Did that on days I had a later class. This was back in 89-93 years when they came out with the onion blossom. Back before they made a punch cutter with 24 blades. For 2 years I prepped those colossal onions with a serrated knife…24 cuts per onion all the while bitching why don’t they have a punch. They had one manufactured 2 months before I was done with my Chilis career.
