One word: competition.
As long as there is competition, there will be sales & marketing folks. Does having a better product and/or lower pricing than the next guy help? Sure - differentiation is huge. But you still need someone who can get in a room with decision makers and communicate that differentiation.
Also most of the salespeople pulling in those high salaries are not going door to door selling vacuum cleaners. They typically work in technical sales and the goal is to sell themselves and their company as experts who can solve a customer’s problems. Many come from engineering backgrounds, depending on the field.

And a bad sales rep can fck a company in a hurry if he is lazy, annoying, or just stupid.
I've been in purchasing for 20 years and it's easy to spot the slackers. The face of your company can make or break the business in a hurry.

Certain industries that have stupid archaic distribution laws need sales reps.

For an established company with a customer base, I think this is true. I see it where I work. Probably different for small companies.

Well, most companies in my industry don’t pay commission to inside salesmen for starters. This is for the exact reason you stated - they are effectively order takers. Those guys are mostly young and/or they’re SAP gurus and their job is really to get orders through the system. I can’t speak for all industries but it’s pretty much standard in mine. Outside salesmen get paid to develop target accounts and manage relationships, hence commissions.
ETA:
Inside = In the office next to the phone, taking orders and hammering out quotes.
Outside = Visiting customer offices and sites, building relationships/trust, managing projects, identifying and quantifying opportunities for revenue forecasting, etc.

What made me think of this is one of my clients is a hospital and I've had to research medical devices. I can find the exact specs of products online so if I were the device company why would I pay such a high commission for someone to go sell it? Ideal compensation to me would be mostly salary with a capped commission. That still incentivizes growth for the salesman, but I'm not paying a guy to go take the same orders over and over again.
In the case of commodity items I agree. However, in specialty situations, the sales reps are more than worth their salary/commission. I cover a very specific market and with some giants of this specific medical field, I can walk in an OR, make a suggestion and they listen. Granted it has taken years of working with these physicians and they know I know what they need done and know how to get the machine to do it with harming the patient. That is why these surgeons are willing to demand the hospital pays a premium for my products. However, until you get out from behind a computer while pontificating and actually discuss specifics with the surgeons you wouldn’t understand.
