As a father of 3 I would honestly upgrade phones if necessary, get a good way to store your photos, and spend the money on something else if you are already not a photographer. My wife is in marketing and design so she has a good camera and is a decent photographer but not great, and she never uses her good camera for our kids.
The other thing that is worth it is to have a professional photographer do some mini sessions. Newborn mini sessions are around $200-300 usually. I always give my wife grief and they always turn out fantastic and well worth it.

I had a prior x100t that I broke in Scotland, miss it. Great series of cameras.

For portraits I would go with a full frame camera (with button and knob controls vs. menu controls, and a big bright viewfinder) with at least a couple of fast prime lenses in the 35mm to 80mm range.

You can get a used d-800 which is way above your needs for $1000. Mirrorless Sony would probably be easiest. Honestly I have a Nikon d-610 with a 105mm and 24-70mm that I almost never use now. Same boat as you. Got it all with my first kid. Used it some as an infant toddler, but the iPhone cameras have gotten so good, it’s just not worth the hassle anymore

Damn. Arrived in Scotland today with my X100. What happened?

Phone cameras have comes leaps and bounds, and the first time he misses a major milestone because he ran off to grab his camera, he’s going to regret his life choices.
I still use my phone camera. Maybe 10% of my photos. But it still has limitations.
For grabbing a scene it's fine.

I always grab the Fujifilm X100F. It’s a delight and in the $1200 range. Not the camera to build a system around (lens is fixed), but a near perfect EDC camera. For kids/family, think most about which camera you’re going to want to lug around with you all day.
Fuji lenses top to bottom are the best line. Even the cheapest (XC line) are as good as most Canon or Nikon sub $1,000 lenses.
The typical "kit" lens for Fuji is the XF18-55, and it's far better than any other kit lens I've tried.
For right at $2500 you can get the Fuji XH-1 and 16-55 lens. Comes with a battery grip with two additional batteries which is awesome.
The 16-55 is as sharp a zoom as you'll find and it's fast all the way through F22. It doesn't have lens stabilization, but the XH-1 has built in stabilization.
It's an incredible setup for $2500. Weather sealed, IBIS, fantastic autofocus system.

Sony rules full frame, but that's some serious money.
Which is why I pointed him to the full frame mirrorless Canon refurb. It’s within reach of his budget.

I've gotten some refurb items from Adorama that I loved. Can't tell the difference. Comes packaged like new as well.

Over the years I've had SLRs, dSLRs, thousand of dollars worth of lenses and accessories. Now all I use is my phone.

Get a Sony a6500. I’ve got one for the same purpose and I love it.

Was not expecting this many replies. Thanks a lot! When I get some time I’ll go through all of the suggestions. It sounds like I really need to do my research on mirrorless.

Bigger the pixel, the less noisy the images are. Phone sensors are tiny, they are pretty good outdoors with adequate light but low light and action, they are not.
Megapixels are overrated. 16-24 is perfect unless you are blowing images up to cover a wall.

2. Pay a little more and get a SONY mirrorless. Much smaller and a hell of a camera
This except save some money and put it In the kids college account.
This here Sony A600 is a ridiculously capable mirrorless. I'm a "prosumer" who's had have had several dslrs over a decade to capture 80k pics of my kids, vacations, etc.
You'll be very happy with the A600 for well under 1k with a decent zoom lens kit. It's compact, sharp, and fast. The phone app to take remote pics for family stuff is very handy as hell.
Just Buy a good prime indoor lens for daily use and enjoy.

These people are either blind or just dumb. I have two immediate family members who make fun of my "real camera" when I bring it around.

i bought my teenage daughter a nikon d750
love the camera especially in low light conditions.
bought her a 1.8f 50mm prime less than $200 and a 70-300mm zoom used for $250
you can check out some of her pics here
LINK
good luck choosing your setup, there are alot of choices
whatever choice you make, make sure you spend the time to learn everything about your camera and it's capabilities.
if you aren't prepared to learn just use your phone.

You may get lucky sometimes but not often.
Yep, there are some things people want to capture that are above what a phone camera can do well.
Photography is a fantastic hobby if you spend a little time learning about it. It doesn't have to be that expensive either.

mirrorless
+1
Buddy of mine has been shooting mirrorless for several years. Constantly trading up between Sony and Fuji’s.
I will go this route unless I just upgrade my RX100 to a newer model. Love the portability of my RX. I tried out the Rebel and a few lenses for a few years and hauling around the DSLR was just a huge PITA. I can just stick my RX in my pocket and it’s 1” sensor does everything I want it to.

Yep. When I first got the silver A600, My kids and a friend made fun one day at a football game. They said it looked like an "old timey camera".

The XT-30 has the same guts, just a less robust camera body. You can get that and the XF18-55 lens (absolute monster) for less than $1300. LINK
XT-3 plus lens is around $1900. LINK
Spend another 400 on the 35mm F2 Prime. Extremely fast. LINK
I use the Fuji XT-20 mirrorless as my everyday camera. Sometimes the DSLR is just too much of a pain to carry around.
I use the 35mm f2 prime lens on it. It is great. You can save a lot of money by buying the prior gen camera instead of going straight for the newest thing.
I use the DSLR for sports and birds.
