The Wranglers at Walmart are the best fitting jeans I have ever had. Levi's is a globohomo allied organization.

I wear the 501 button fly jeans. Certainly aren’t baggy but they’re not skinny jeans, either. Quality isn’t what it used to be, but what is?

Neither of those are “slim straight”. There used to be 513s which were true slim straights. That’s what I always bought for a decade or longer but they discontinued them. Smh.

Even 511s, which Levis calls 'skinny', are straight leg and not tapered looking leg skinny jeans.
Every style comes in so many different types of denim now, which makes just as much difference as the various slim straight cuts. I like the 98-99% percent cotton ones that are just slightly stretchy but seem like old fashioned 100% denim.

That statement is both correct and incorrect at the same time.
For older people like myself (57), I have been wearing Levi's jeans almost exclusively for over 45 years, and it is easy for me to say the quality has gone downhill. I still have 501s from college that are over 35 years old, and while I don't wear jeans nearly as much as I did through college and grad school, they are just now getting too worn to be seen in public.
The issue that makes your statement incorrect is just like RL's Polo line, there are actually multiple levels of quality within Levi's and that extends toward models. So there are multiple levels for 501s out there.
The lowest level, which is indeed of much lower quality than when Levi's had one line, is their standard line. If you buy your jeans at Walmart, Target, Costco, Levi's outlet, or etc, you are getting the low-quality stuff.
Above that, you have their premium line and their Made in the US line, the latter is all or almost all been phased out. These lines are of very similar quality to what people remember when they had one level of quality. They can be found at some department stores, Levi's brick and mortar (not outlets) and online. Yes, they cost more.
If you want the very best Levis you can buy, then the Levis Vintage Clothing (LVC) and Made in Japan lines are what you want. LVC is now made almost exclusively in Japan since they have shifted away from the Made in the US line. Outside a few boutique manufacturers in the US, Japan makes the best denim in the world, full stop. Levis' MIJ line is impeccable quality and better than any of the jeans you remember from your younger days. They also have a price commensurate with high quality, with a Levi's label on it in 2025.
You can get the quality you remember, but not at the prices you remember. Just keep in mind that Levi's on the label does not mean the same high quality across the board. If you want basically the same quality you remember look for this:
