How long does it take once you're off the plane?

It used to take quite a while.
I got through in about 30 minutes.
Same for if you are transferring to another flight or if your travels terminated in Atlanta

Maybe about 30 minutes to an hour. Not an airport where I've ever really had trouble going through customs. Give yourself a two hour window if possible.
Houston though, those bunch of dumb fricks, I'd say have a 4 hour buffer. Those clowns are awful.

GOES
Look it up.
It's not expensive and it's worth the registration.

Did it 3 weeks ago and have done it several times before and it all depends on how many flights come in. 30 min to an hour is about right depending on how many people have to go through.

I'd guess close to an hour. Went through there a few months back.
The passport review went pretty fast, but then all folks getting on a connecting flight had to go through metal detectors and screening, take off shoes, etc. like a new arrival. They say it's because you were reconnected with your checked bags and might have taken on banned items from your bags. That took as long as anything.
They did have plenty of people telling you where to go, etc. at each step of the way.

Just put on a turban and they'll send you to the front of the line.

See if they offer mobile passport. If they do, download the app. Did it in Houston and it was awesome

Atlanta is easy IMO. 30 minutes.

It's never taken me more than 30 minutes at Bush. The last few were under 10 minutes.

Ditto. Flew in from Costa Rica about 4 weeks ago and got through customs in maybe 10 min max.
