The thinking is that a high GI simple carbs like white rice have essentially the same effect on insulin response as pure sugar.

First 15 lbs lost on keto or any severe carb restriction is water and will help clothes to fit better just like fat loss. However
Can be regained in a 3 day weekend with even moderate carb consumption. Easy to get on a roller coaster of water gain and then peeing every half hour. If you restrict carbs for a longer term and lose significant fat it takes longer to regain the fat even as water weight continues to cycle. The key is to keep glucose levels low, as insulin response to glucose level changes determine whether fat tissue is stored or extracted.
Biggest obstacle is believing that whole grains are complex carbs which do not generate insulin response. Modern wheat strains developed in the 80's have a complex carb called ampholectin A. An enzyme in human belly instantly strips the bonds on the complex chain and leaves it as simple sugars (glucose). Two spoons of pure sugar are lower sugar than a slice of whole grain wheat bread in germs of glucose levels and insulin respone.

Meh. I was eating pretty clean before I started. And while there is no doubt that you flush a lot of water, I did not have the typical 12 lb loss in the first week. My glycogen stores were already low from eating clean and working out. I have lost pretty much 2 lbs per week, steady.
But overall, I agree with you.

Seriously, gonna be a month Monday. Went from 233 to 219 lbs.
I'm shooting for 205. At some point, I'm gonna go from strict keto to keto and the Perricone Promise.
Basically just adds more fruit and other types of vegetables.

I'm almost 4 months in and 35 lbs down. At this point I don't miss any of the carbs. I go over 20 grams on the reg because I eat a ton of vegetables including non-green peppers and Brussels's sprouts. I don't stress over that nonsense.
It took a while, but I have completely lost the urge to snack or eat mindlessly and my energy is up and steady.

I have been ranting for some time that:

The biggest thing that gets overlooked is the contribution that food quality makes to shaping the micro biome (gut flora). Very few people have this on their radar. Guess what favorably influences the composition of the micro biome (and your overall health, mood, physique, resiliency)... (see my limited post history with numerous links supporting the claim)
A Paleo/keto style diet. Namely a diet high in fiber (greens, veggies, legumes) and quality fats while being devoid of traditional processed carbs (pasta, grains, etc) while also trying to eat the most quality sourced meats you can obtain
I am also on record as advocating for resistance strength training and/or HIIT as the most efficient/effective/practical way to train the body. Traditional "cardio" is a time sink with less payoff (engineering a body that adapts to that training yielding a less muscled athlete (less metabolically active tissue where the magic happens) and more chronic wear and tear stress leading to injury/illness in the often times compulsively overtraining/overstressed/sympathetic nervous system dominated individuals).
But hey, traditional dogma sells a frickload of shoes and nutrition bars/drinks...
