OP, just go get her a little something you know she likes. It doesn't have to be flowers, chocolates, or anything cliche. Showing her you pay attention to what she likes/wants goes a lot further anyway than some thoughtless thing you pick up at Walgreen's.
This is especially true if it's your first Valentine's Day together.

My fiance' and I have been together for almost 6 years and we have never celebrated V-Day. I couldn't care less.
We go out to eat when we can, spend quality time when we can, do nice things for each other often, and he brings me flowers on random days where they mean way more than "expected" Valentine's roses.
Going out to eat on VD is a huge pain in the arse, anyway. Everything is prix fixe or marked up or you can't get a table. Flowers are of lesser quality because they are ordered in such huge quantities. Sometimes they don't even make it.
Valentine's Day is a racket.
As long as you do things to show her you love her in other ways on other days, I wouldn't sweat Valentine's. If you really feel like it will be a big deal, maybe leave her a note or something tomorrow reminding how much you care about her and that you'll take her to dinner or a movie this weekend or sometime next week. That way she knows you didn't forget, but you're off the hook until you have some free time.

My wife and I both think it's a stupid holiday.... so we have since deemed it as an excuse for us to go and eat at our favorite restaurant (no gifts, no letters, no treats) just big arse steaks and cocktails night

Same. We love going out and don’t have kids, so nothing that people do on Valentine’s Day is any different from a regular night anyway. So we just stay home and I cook.
Although we did do dine-in Burger King on Valentine’s Day once when we had been craving it for a few weeks.
I did go to a pretty badass “Galentine’s Day” wine dinner last night though and got way more tipsy than expected because the folks next to us didn’t show up so we had double the wine.
