I think it was because Blink 182 never really took themselves too seriously. Nickleback acted like they were God's gift to mankind.

The difference is that Sum 41 evolved and took a serious turn with the Chuck album (nearly getting murdered during an African Civil War will do that). They took a lot more influence from power metal like Iron Maiden and were one of the few groups of the time to still prominently feature guitar solos. In addition, while Green Day’s political turn with “American Idiot” still kept a little of that juvenile middle finger attitude, Sum 41 tried to become something more serious. They were all jokes and fun with “Fatlip” and “In Too Deep”, but moved towards angsty “Rage Against the Machine” style rebukes of consumerism and the police state.
You can hear No Reason sounds VERY different in style from any Blink 182 track.
This caused them to lose mainstream appeal and fall off the map. They broke up for a while, but have sense reinvented themselves again as a quasi-metal band with that hard political and pop culture critical edge.

Since they actually started taking themselves seriously, seems they deserve far more ridicule even if their modern music is far more sophisticated and technical.
As far as Nickelback hate, it actually started when their singer, Chad Kroeger, stole the singer of Sum 41’s wife, Avril Lavigne
Deryck Whibley was the sk8r boy, she said see ya later boy, he od’d, almost died, Sum 41 took a hiatus, and Chad and Nickelback became internet’s public enemy number one.

I know that, I was mainly talking about their earlier work, which is fairly obviously Blink inspired.

I'll say this, Travis Barker is underrated for his technical ability, IMO. For the stereotype of pop punk being musically simplistic, he has legit talent.
There are actually some modern pop punk bands that have legit drum work too. I've listened to Belmont a lot lately.

The plane crash in 2005 essentially ended Blink 182 (and pop punk and rock in general as mainstream relevant genres in pop culture). When bands are victims of tragedy near their peak rather than a long fade out from relevance, it causes their popularity to surge and have far more staying power than it would have otherwise. That plane crash caused Blink 182 to have crazy staying power in pop culture despite the fact that no new music would come from them for over a decade (because it took so many years for Travis to recover physically). Current blink 182 music sucks, though, because Tom Delonge is too busy chasing aliens and his voice, while terrible, is part of the identity of the band. It just doesn’t sound like Blink 182 without him.

Compared to all genres of rock but metal, pop punk has the most sophisticated and complex drumming by FAR. Yellowcard always went hard AF on drums despite the simple chord progressions and poppy lyrics.

Wrong. Delonge left in '05 which broke the band up. Travis's plane crash wasn't until '08.

Blink-182 took serious turns throughout most of the career. Adam's Song was on Enema of the State, I believe. Stay Together for the Kids was on a proceeding album, and Miss You was on their even later self-titled album.
Miss You is actually a great song, if you can get past Tom DeLonge's nasal whinging. Even the lyrics in his part are great. We've all been there if we've been in love.

Pretty much this. Loved Blink back in the day, can still jam to the older stuff from time to time usually chilling with friends who were the same way.
New stuff blows and don't really follow. I do think it would be cool before they're done to do another album with Tom as a finale.
As for Travis, yeah, great drum. He's legend for the era without a doubt. And the longevity now producing so many tracks and now the new MGK album and so many people want to work with him...speaks volumes.
