RRR - a 3 hour long Bollywood movie with unbelievable over the top action sequences? Meh, I’ll give it 15 minutes…

LICORICE PIZZA
My daughter, who is into all these artsy movies and artsy directors, was all ga-ga about it and told me I might like it. The title alone seemed indicative of an artsy-fartsy movie I wouldn't like, but then I found it was a period piece, and so I watched it online.
Damn, I enjoyed the heck out of it:
--Great main role acting by Phillip Seymour Hoffman's son Cooper and musician Alana Haim.
--Cool "real people" roles by Sean Penn (as a thinly veiled William Holden), Bradley Cooper as Jon Peters, and even Tom Waits as an old director based upon Mark Robson and Sam Peckinpah.
-- They NAILED the 1973 look and feel in this movie, almost as well as Richard Linkater did for 1976 in Dazed and Confused.
-- Good, simple little story about growing up, with an unusual love story at its center.
-- Fantastic soundtrack.

I jumped the gun on this one because of Francis Daily's comments as well as I had just seen The Legend of Vox Machina on Prime. Seemed too similar, and I didn't see why we needed a live action of basically the same thing. D&D HaT wasn't perfect, but it was very watchable.
Nimona - I had no business liking this one, and I doubt few saw it but it was really well done. Saw it several times.

There are movies for which I had high relatively expectations going in and the film exceeded it. Examples:
1. No Country for Old Men
2. Once Upon a Time in Hollywood
3. Interstellar
There are other movies that I had more middling expectations and was blown away. Examples (both have Domhnall Gleeson in the lead, coincidentally):
1. About Time
2. Ex Machina
If I'm being honest, Tropic Thunder, Superbad and Moneyball (ETA: Frankly, Donnie Darko, too) could all be in that second category as well.
(ETA: Reviewing my list, particularly Interstellar, I would say that Memento has to be mentioned as vastly exceeding my expectations going in, and that is also true of Primer.)

Recently, The Batman.
No way the dude from Twilight could hold up a Batman movie. I'm not sure we NEEDED more batman movies, thinking Nolans movies couldn't be topped.
And he was fine. The cinematography was incredible. I'm looking forward to a sequel.

Was in college In 2010 and thought how could some nerd inventing Facebook be interesting at all. Whew boy was I wrong. An all time top 10 movie for me now. The script/the pacing/the score. It fits so well and never bogs down

The Other Guys - One of the most under-the-radar comedies of the last 20 years, IMO.
The Menu - Darkest of comedies and one of my favorites of late
American Psycho - Another dark comedy. I had an ex-GF at the time who was bothered by how much this movie made me laugh. (She wasn't much of a critical thinker)

Maverick lived up to it's potential. It was as good as you hoped it would be. That's pretty rare nowadays, but I think that's a little bit different than what OP is asking.
I think OP is asking for movies that came out of nowhere, that you had no idea was being made and no desire to see, but after watching, you came away saying "damn that was good. I'll watch it again, and if they make a sequel I'm definitely there".
