I doubt many really thought she was physically the hottest (although she is obviously hot from as objective a point as people can have on such things). I think it has as much to do with the fact that she was the girlfriend of the main character in a couple of iconic movies for guys in the 80s. It's a kind of the whole you wanted to be the Karate Kid and Marty McFly and you wanted their girlfriend too.

It has more to do with her being very pretty in a normal, unpretentious way. It's that "girl next door" stereotype. Her look seems like a normal* person that you could know instead of a manufactured super model or glamorous actress type.
