First four seasons of Friends vs. rest of the series

Just caught a few old season episodes of Friends and I'm not sure if I can think of another show that was so different in tone from its first 3-4 seasons vs it's last 5 or 6... maybe only Cheers, but that was primarily due to coach's death and Long leaving the show.
Regardless, once Chandler and Monica began hooking up, the show went into an overly sappy, almost female aimed direction instead of the straight forward sitcom it was in the early years, which was just phenomenally written, acted, and entertaining show.

In my opinion, Joey changed the most. In the first few seasons, he was very smooth with the ladies and seemed very confident with himself. He might not have been the brightest person in the group, but he got by just fine. Then in the last few seasons, he just got dumber and seemed to be the butt of a lot of jokes. They played down his suaveness and played up his idiocy, which I think hurt his character.

Phoebe was the same way. She went from quirky airhead-ish to almost literally retarded.
I loved Friends back in the day when it aired, but watching reruns now...it hasn't aged well at all IMO.

I will always stand by my statement that Chandler Bing in the first couple seasons of that show is on the Mount Rushmore of sitcom characters.
All of the characters change around seasons 4-6. The end of that show is completely different than the beginning.
And I agree with the above posters that Joey and Phoebe went from aloof and goofy personalities to barely functioning retards by the end of the show.
Case in point this plot line and everything in it from acting to directing to writing:
Joey learns French

It started to suck when Chandler/Monica and Ross/Rachel relationships started

Even though I find that scene funny, if it was done in the earlier seasons, it wouldn't have made sense.

I think it was more toward the Chandler/Monica era than Ross/Rachel. Had some great episodes after the Ross/Rachel breakup.

Agreed.
THEY WERE ON A BREAK.

I like the episode or two where he falls asleep reading her long arse letter and never finishes it and just agrees to it. Then later he actually reads it and is like WTF is this nonsense kills me.
Plus Rachel gets his girl bald.

A lot of the best jokes were ripped off from Larry David and just re-enacted in the earlier seasons. When Seinfeld ended, their pot ran dry and the show went from a comedy to a soap opera.

My wife and I just started from the beginning on Netflix. I grew up watching it, but she never did. I never realized how early in the show the Ross and Rachel stuff started. Rachel fell for Ross while he was on his trip to China at the end of season 1. So, I don't think it's fair to say the show sucked when Rachel and Ross started dating because that was around the second season. If you think it started sucking then, then I would assume it was never a show you liked.

most shows seem to struggle with this...a popular character that is slightly dumb, eventually just becomes a complete retard
Kevin from The Office is a great example of this. From slow witted accountant to the last season where he believed an infant child bought him an iTunes gift card.

The plot line where Rachel and Joey started to hook up were cringe. Just hard to watch.

If you really want to ruin Friends, look up the Youtube videos of the episodes without the laugh track. It's a horribly awkward show without the audience filling in the laughter gaps.

Ross/Rachel, the first run and break up, were some of the best episodes. It was after Chandler and Monica began that show turned like another poster said, into a soap opera.
Friends suffered the fate that many of those sitcoms did back in the day... they ran out of story lines, so they just turned to "emotional" stuff between the cast instead of comedy.
This is why Seinfeld worked so well throughout its entire run. Yes, some seasons (4-6) were probably the highlight of the show, but it never veered from its established character rules because the show had a "no hugs, no lessons" policy in writing shows.
They knew that stuff was not good and would ultimately make the show suffer. These were 4 pretty petty and terrible people, but they were who they were and it didn't matter.

I've always thought the evolution of Ross' character was the worst.
He becomes a complete cartoon character at the end.

I think that character arc is a common thing for aging sitcoms because over time, it gets harder to mine laughs.
Writers respond by accentuating the aspects of the character that make people laugh. For characters who are already not the sharpest tacks, this makes them get dumber and dumber.
Eventually, the characters become caricatures of what they were earlier in the show.
