I've been thinking bout getting a full racing cockpit setup. Price isn't the issue. It's the amount of space it will take up.

Don't do it... you will start out small and very soon you will be daydreaming about $60,000 full motion rigs.
Guenther says Mick's chassis was salvageable and Schumacher will be racing it around Albert Park. I admit I am surprised.

I looked about a year and a half ago, but everything I was looking at what constructed in Europe and not shipping to the US due to covid.

Look up Playseat, GTR Simulator, Next Level, and Open Wheeler. These have options in the low to moderate price range. Personally, I think GTR Simulator has the best options in the $400-600 range. There are better options if you plan to spend more on your rig. If I have one piece of advice I think most everyone including myself overlooked initially is do NOT scrimp on pedals. Too many people see pedals as an afterthought and while they are not as sexy as a new 10+ N-m DD base or badass 1:1 wheel they will make a bigger difference in laptimes and physical immersion.

Same here. Are there any that can break down or fold up (not the seat obviously) and maybe have a smaller footprint if you went VR rather than screens?

Not sure because you still need a wheel and pedals and those two take space. I also want a cockpit with tons of adjustability for comfort.

I know it’s been posted before, but anyone that hasn’t seen the Ayrton Senna documentary needs to see it. It’s worth whatever you have to pay to see it.
The early 90s is when I first got in to F1. Senna was unbelievable.
It would be a great watch for a weekend with no race.

They do but as you might imagine they are on the lower end. Next Level and Playseat both make ones that are reviewed well but they aren't going to be stiff enough to mount something like one of the strong Fanatec DD wheel bases onto without significant flex. The 8020 aluminum rigs like Buckeye linked are the best for both stiffness and adjustability and some variant including DIY are generally used in the high-end full-motion rigs.
All that said an inexpensive folding rig with a $400-500 wheel/pedal set sitting in front of a TV with less than perfect FOV playing on a console is a ton more immersive than sitting down playing on a computer or with a gamepad.

I've done a ton of online sim racing with crap equipment, and I think the lack of a proper brake pedal was what hampered my performance the most. There was a guy I frequently raced with who would always qualify near me, and on fresh tires we had the same pace. But I eventually realized that over the course of a stint I would lose pace more rapidly than him. This happened all the time. I realized that I was always eating up my tires faster than him. I'm sure it was a combination of reasons, but I always wondered how a proper brake pedal with a load cell would improve my driving. I never bothered to get good equipment for the reason others here are saying: lack of space for a proper sim setup.
Heusinkveld seems to be the big name in high-end pedals.
