Chad Jones seems to be the biggest star in 2 sports that I can remember.

Jared Mitchell was actually on football scholarship, yet started at CF and was drafted by the White Sox. Has to be mentioned.

Depends on how you define it.
I feel like a lot of people really mean "best football player who also played another sport" and in that case it's probably Chad Jones, but he really didn't contribute that much in his baseball career; Jared Mitchell wasn't nearly the football players but was way more of a contributor in baseball.
If you mean "best player in one sport who also played another sport" its probably Ben McDonald. Maybe Xavier Carter or Bennie Brazell (football being the "other sport" in those scenarios).
Chris Jackson and Jeremy Witten also contributed a decent amount to both football and baseball. Ricky Jean Francios is in LSU's top ten for shotput and was SEC and BCS CG MVP.

All scholarship athletes who play football are counted against the 85 football limit.
