Started a new job where I’m leaving the house at 4 every morning and want to start bringing a healthy lunch I can prepare on the weekends since the past couple weeks I’ve been eating terribly at lunch

Rice, meat, vegetables in a bowl with your choice of sauce. I do Korean BBQ, spicy ranch, carnitas, some spicy Asian sauce, etc, etc

I make eggs/bacon the night before. Then have some deli meat, cheese, low sugar jelly, and a homemade protein bar. Easy, cheap, and not heavy enough where I don't want to work

I grill a bunch of chicken over the weekend and put that along with some vegetables in meal prep containers for the coming week.

Throw as much meat and veg as you can fit in the crock pot and make some rice.

Scramble 20-25 eggs with spinach and some cheap meat (ground turkey, beef).

For quick and easy, it is hard to beat putting on a pot of rice and throwing some chicken and veg in the oven.. Personally im pretty tired of that so I try to so different things.

This week Im having Greek chicken bowls.

Chicken breast
Fat free feta cheese
Kalamata olives
Artichoke hearts
roma tomatos
Cucumbers
Banana peppers
Roasted red potatoes
Parsley

If you've got the macros to spare, some olive oil or Greek salad dressing would do well
Voluminous and delicious and eaten cold

If you cook dinner at night, then just make extra portions to bring with you for lunch the following day. That's the easiest way for me to eat heathy lunches and not eat the same lunch for multiple days in a row.

Monster Mash in Instapot

I've have been doing this, but I add more beef and season the hell out of it. All the rice and veggies are pretty bland.
