My favorites are not fries, but oven roasted potatoes fournou. And Zorba's in its original incarnation had potatoes fournou that were good enough to remember. I plan on giving the new restaurant a try soon. Hopefully, the potatoes fournou will still be memorable.

This changes on a regular basis. I have a very short fry memory. I just know when I'm eating good ones.
Right now, it's the Frying Scotsman in Portland, OR. It's a food truck where they serve fish and chips. These are Scottish style chips, which are almost like potatoe wedges that are deep fried. They are great when they are hot out of the oil with a little sea salt...

Fry bar?
More of a food truck type thing in New Orleans than a restaurant but their fries are really good. They fry their fries right while you wait and top with fresh herbs or whatever specialty fries they come up with. They also make their own dipping sauces. They are usually at markets around New Orleans. Some of their specialty fries I have had are gumbo, slow cooked roast beef, muffelata, etc. They usually serve one or two regular type fries topped with fresh herbs and one specialty type.
