My go-to batter is Kentucky Kernel lemon pepper. Great flavor.

Yellow corn meal and white corn meal mix, then seasoned with what I like to put in my batter to give it some pop. Oh, and not the old style corn meal, but the finer ground stuff.

I find most commercial fish fry products that I've tried in the past are a bit salt heavy.

season by hand, most seasoned mixes are pure salt

then dust in Yellow corn flour (not meal)

small grocery stores sell the 25 lbs bags of corn flour so it costs you less then a dollar a lb, in the store a 1 lb box of fish fry costs you $5, think about how much money you waste and if you fry often get the big bag and save $$$$

Louisiana Products blue bag. Sometimes I’ll mix some of the shrimp fry with it.

Louisiana blue bag works fine by itself. It's not too salty. But it's even better cut with some corn flour.

That's the stuff they make cream corn out of. You can get it locally at Bill's Yellow Cream Meal store, as well as other places I'm sure.

Indian Girl Cream Meal.

Its what Spahrs uses, its corn meal ground into almost a powder like consistency.

The stuff you buy at Rouses in the clear container weighed by the pound near the fish fry and sometimes in produce section is cream meal.

Louisiana blue bag bruh. And like Balls said, you can throw a little corn flour in there to mellow and smooth it out a touch if you want.

I was a LA red bag guy until I sampled the Kentucky stuff at a fish fry. On that bandwagon now. Try it!

Louisiana blue bag mixed 50/50 with white corn meal. Add a little Tonys and some garlic salt to taste.
