Why do some Restuarants choose to ignore the Noise issue?

Off the top of my head, I can name three, but I'm guessing there are plenty.
Walk-ons, Cane's, and my most recent experience, Willie G's on Coursey.
I get that Walk-ons is marketed as "sports bar", so it's a little more forgivable, Cane's is fast food, so I guess they don't care if their environment is crap.
WillieG's is a decent place, decent food, at prices that match. I enjoy their menu, and usually sit on the patio because I don't care for their indoor environment. Last night I went with a couple other people who preferred the A/C. It's crazy how everyone in there is speaking SO loudly to be heard over each other. It's basically like a middle school gym.
Some simple sound absorbing panels on the walls and/or ceilings would make this place so much nicer. Am I just getting old or what?

You're issue with restaurants is much bigger than noise.

Olive or Twist and City Pork are two that immediately come to mind. And I still think it's one of many reasons why the Pelican House didn't do well.

You forgot the most obvious one, the Bistro Byronz on Government Street. It's like trying to sit down and dine and hold a conversation during an LSU/Alabama game in Tiger Stadium.

There are restaurants that I will only go if I can sit outside. City Pork on Jefferson is one.

Overpass Merchant at peak times is the loudest restaurant I have ever been in. I will never again sacrifice my hearing for fried chicken skins!

Pelican Club was the worst. If I am spending$150 on dinner then I want a atmosphere less loud than a sports bar.

We took a tour at NBC. Jimmy Fallon's studio has wood panels with little holes that absorb the sound. The whole tour group screamed, and there was no echo. Just flat. I immediately named a couple of restaurants that should buy the material.

As the article states, sound absorbing materials that meet the modern design ethos are expensive. With that said, there is absolutely no excuse for the volume of piped in music I've experienced at some restaurants. Whenever I've inquired, almost invariably, someone like the bartender is in control of the music for the restaurant. Because they don't have a direct proprietary interest in the space, I find they frequently play what, and at what volume, they like, even if it utterly otherwise clashes with the vibe of the restaurant.

This is my personal pet peeve.....I recently went to Banana Blossom Thai in old Gretna. What an unbridled ruckus.....painfully loud, and I was dining with two hard of hearing folks. We enjoyed the food very much, but lip reading was the only was we would communicate. Bare floors,bare tables, big windows, the whole place is a giant echo chamber. Despite liking the food, decor, location, I won’t be back. It’s a problem all over.

I don't think so. Who wants to have to damn near yell at each other to be heard in a restaurant. I purposely avoid loud restaurants for a business lunch.
One of my favorite places in Sugar Land is a place called Japaneiro's at Town Center and the noise is off the hook. Avoid it or we just go early. Seems like some of the restaurant owners have decided that noise equals some kind of ambiance and it is not.

I’ve never really noticed, but that isn’t something I really pay attention to. I enjoy a “lively” atmosphere.

Agreed on Byronz. We had a table of four during brunch one Saturday and had to yell to order.
