Checked Best stop, Kartchners, Nunus, Dons, Heberts, Rouses, and Super1 so far.

You have named every place I could recommend. Next two questions:
1) Will beef liver not do?
2) Is there a slaughterhouse in proximity?

Planning to make boudin tomorrow, I used chicken liver last time but would prefer to use pork. I even remember Super1 on Duelles having it because I made a mental note of it for next time but apparently they no longer carry it.

No for Lagneauxs.

My go-to for products many local stores don't sell. Ideal in N.O. and a couple other stores that cater to the Hispanic crowd usually carry things places like Rouses, Winn-Dixie and others don't have.

The Asian Market (by the mall) carries it all the time. Meat counter, back of store.

Gonna try your hand at making Boudin? If so, just know that pork liver is a good bit stronger tasting than some other livers and add it accordingly.

I usually add 1/2 pork and 1/2 chicken liver to my Boudin.

For future reference, Iverstine's in Baton Rouge had it when we looked for it last spring. I would call before making the trip to be sure.

Note of caution: Slaughterhouses sometimes sell offal (liver , kidneys, etc.) for pet food and bait, especially crab and crawfish traps. They don't handle it as carefully as they do meat for human consumption. Be sure you explain in advance that you want to eat it.

Old shopping rule of thumb that may be fading is look for unusual stuff at the far left end of the meat counter.

Only cooked pork liver once for liver and onions and found it little different than beef liver.
