If it's a Tex Mex place...probably carnitas, fried crispy.
If it's a taqueria/truck...lengua, barbacoa or chicharron, shite load of salsa verde, cilantro, onions or torta ahogada.
Legit Mexican places...birria, menudo, chile colorado.

Depends entirely on the restaurant. If it is a true Mexican dive, I'm going for street tacos or gorditas or ceviche. Might go for mole enchiladas or chiliquiles. Poblano rellenos are good too. Maybe even a torta. If it's more of a texMex place, I might just order nachos.
