I do agree 100% but don't forget you can freeze the sauce. We usually make 6 months of Bolognese and marinara at a time. Not a lot more trouble than making a small batch then just freeze it in zip locks and you can avoid ever having to substitute.

Yum. I've done spaghetti sauce with all kinds of odds and ends as well. One of the best ones I made used leftover andouille.

frick I love the Cajun Power brand Cajun sphagetti, just spicy enough, my wife likes it and kids can't get enough of it. They crank em out of Abbeville I think.

Never liked Ragu or Prego or any of the other stuff but needing a mid-week sauce a while back because the kids and wife wanted spaghetti, I grabbed a jar of Cajun Power. Always enjoyed making my own long-cook red sauce but when I tried this stuff? Haven't made one since. It's the exact flavor profile I go for in my sauce with none of the work. It literally needs nothing (except a protein).
Another vote for Cajun Power. And now I wanna try Vinny's.

I’m just here to update that I finally tried Rao’s once I read on this board that you could get two jars at Sam’s for $8 instead of one jar for the same price at the grocery store. $4 a jar is still high but I could justify it to try something new.
Well, it’s my new favorite. I got the plain marinara sauce and it was absolutely delicious. I decided to not add anything to it except for some chili flakes for heat. It was perfectly seasoned on its own. The only seasoning I added to the ground meat was salt and pepper. I’m definitely going to be grabbing this every time I go to Sam’s. Again, $4 is a bit high compared to what I was used to buying (around $1.50 a can) but not having to do anything to it is well worth the price and it tastes better than my doctored version.
I would love to find their other sauces at Sam’s but I have a feeling they only ever carry the marinara.

Mix the Vinny’s with the Cajun powder. Use both entire jars.
Add a can of regular Cento sauce and a half can of cento paste.
Touch it up with a little extra oregano, Italian seasoning and pepper.
Cook some meatballs and throw them in the simmering sauce. Let cook for another 3 hours.
It makes the best red gravy and meatballs that is not from scratch.
Freeze the rest.

Rao’s, Michael’s of Brooklyn, Victoria, and Paesana all make quality pasta sauces.

The rest seems to be optional, but I add lots of basil, some garlic and then season to taste.

Yes. When tomatoes are coming in during the summer, I make large amounts of basic marinara and freeze it. I use this a lot of the time, but I surely have zero issue with cracking open a decent jar of sauce like Rao’s or Sal and Judy’s if I forget to thaw my own. I doctor it, usually, but it isn’t really necessary.

My favorite is whatever's on sale. Then we doctor it up with garlic powder, tony's, parmesan, etc.

If you like a sweeter sauce Vinny’s. It’s da best.
