Undecided on Pork Butt or Baby Backs. Smoke will be rolling Sunday morning regardless!

Just dropped off two Boston butts at the house. One will be for carnitas and the other will be BBQ.
Whole chickens were on sale for less than $0.30/#, so I'll smoke chickens with the butts.

Cheap arse Pit Boss Series 5 pellet smoker I bought on clearance. I bought some of their "championship" pellets earlier this week.

Like mentioned, Costco has them in their meat cases in the pork section. I've also seen them at Rouses, but I've not had any issues getting them from Costco as they are always available.
I've never "cooked" one on my smoker, meaning getting the heat up in the 225-250 range. I will cold smoke mine in the 85-90 degree range. This doesn't cook the meat, but does infuse it with a lot of smoke flavor and you cook it like any store bought processed bacon.
All I did with mine is use equal parts kosher salt, dark brown sugar and syrup mixed together and slathered over the outside of the belly. Then placed it in freezer bags to marinade in my fridge for a week before cold smoking it for several hours. I'll flip the bags every day to make sure the mixture thoroughly coats the meat as it marinades.
After a week, I'll remove the pork belly from the bags, rinse them off and pat dry and let it set uncovered on a rack in my fridge for 1 day to dry the outside of the meat prior to smoking.

Rouses had t bones on sale today so I picked up a pack to grill. I have pesto and am thinking about topping with pesto butter. I see recipes online but have never done it. But love steak and love pesto.

Just put a 7.5lb butt on about an hour ago. Trying out this Pit Boss pellet smoker that my in laws got me for Christmas. We shall see..
