Shrimp Etouffee last night. Probably will have leftovers tonight.

Smothered Steak, rice & gravy tomorrow night.

Planning to just grill some chicken breasts on Wednesday night along with some cabbage steaks.

Busy Thursday night so keeping it simple with breakfast for dinner. Eggs, bacon, and biscuits.

Cooked a roast beef with rice and gravy last night. Tonight I'll dice up the leftover beef and we'll make toast and have open face roast beef and gravy sandwiches
Got some chicken thighs and pork chops in the fridge for the week too. Not sure what we'll do with the pork, but my wife has been making a good dish with chicken thighs and green beans in a skillet with a lemon/garlic sauce

Monday nights are usually leftovers at my house. I try to cook on weekends; if the weekend was busy, it's something simple and quick.

Tonight, it's gonna be Aidell's chicken/apple sausages from Costco, broiled, along w/steamed asparagus and maybe some boiled new potatoes w/butter. If I have buns in the freezer, the potatoes will get swapped out. A little dijon mustard on the sausages in the buns. That's complicated enough for Mondays for me.

tonight is 2nd day gumbo.
tomorrow is tacos
wednesday will probably be crock pot spaghetti
thursday will be steaks
friday dunno yet. probably eat out or a rice n gravy

Breakfast tacos the rest of the week. I made a egg and sausage frittata yesterday, and I just break up a square into tortillas then add some cholulu once I get to work.

Burgers for lunch the next two days.

Blackened speckled trout tonight with some veggie and roasted red potatoes.


Possibly a ribeye one night. I am feeling froggy.

I'm going to try a crock pot roast chicken later in the week. Read about it online and it's supposed to be like a rotisserie chicken, but without the crispy skin, I guess. We'll see.

Today's meal will be leftover zucchini lasagna and tomorrow I have to figure out how to use some leftover meatballs that were in a marinara sauce, but now the sauce is mostly gone but I still have some delicious meatballs (Pioneer Woman's recipe). I also have some leftover roast that I might use in wraps with avocado.

We've got three different kinds of sausage in the fridge right now, NuNu's pork sausage with Steen's, Rabideaux's and some fresh hot Italian sausage. I'm hoping my husband will grill some or all of it. Low carb wraps for me, poboys for him.

There's broccoli in the fridge that needs using, so that will be a side with one of the above, unless I buy some steaks, and it will go with those. I thought I was going to be making a big pot of chicken soup this week, but the stewing hen was in the sunroom fridge which wasn't cooling appropriately and now that hen is in the freezer waiting for garbage day.

Probably not very helpful.

I am just getting into a more "bulking" phase of the year as it cools a bit. I will start making brown rice/black beans in the instant pot weekly.

I do about 6 servings of each with about 7-8 cups of water, some garlic and onion. 28 minutes on high pressure and let it release naturally. I just experimented with it yesterday and it was great. A bit too much water but after draining it tasted great so I may play with that a bit

My go to meal is ground turkey, onion and spinach/kale in a skillet. One pot meal then throw some hot sauce on it. Again, could go with my rice/beans combo easily as well

Tonight - Mississippi pot roast poboys for the game.

Rest of the week - Spinach and cheese ravioli, Beef tacos.

I smoked some beef short ribs Saturday.. So I am having that with a giant loaded baked potato and BBQ beans..Probably have that again Wednesday night sans beans. Tuesday will be chicken salad and a veggie. After that it's up in the air..

I usually cook on Monday and eat leftovers tue and wed. Making red beans and rice tonight. Last week was a dashi ramen, week before was new mexico hatch chili enchiladas. Thursdays are fish tacos or something else quick and easy like a tuna burger. Weekends we eat out or get takeout

Tonight is an InstantPot pork roast and mashed potatoes.

Tomorrow is ground turkey tacos and queso.

Wed-Fri is undecided, but we have chicken breasts and ground turkey in the fridge.

Fasting today

Tuesday----Grass fed rib eye with Brussel sprouts and cauliflower mash big spinach salad

Wednesday Pan sauteed Alaskan salmon coated with crushed pork rinds(seasoned with garlic powder, onion powder, tumeric and tandoori spice) Fried red cabbage with onion/garlic Kale/arugula salad

Thursday fasting

Friday Probably a big med-rare burger with cheese and crispy pork belly roasted broccoli shaved brussel sprout slaw
