My homemade chili is damn strong as well as my chicken fried steak(old Piccadilly recipe). I can take a 3-4oz cube steak and it will end up covering an entire plate...throw on a heaping serving of white rice and smother them both with cream gravy....probably my death row final meal.

I just call it "my pasta"

I make penne noodles from scratch. The sauce is a marrying of a kind of roux with generous helping of Cheyenne pepper and green onions, and my homemade Alfredo. Makes for a spicy, earthy, creamy sauce.

Serve with either sauteed shrimp or blackened chicken.

Been working on homemade breads for the last few years, think my olive bread is really good. Also, an Asian salad I make is always highly praised . People here really like my gumbo, but it’s N Texas so they have no frame of reference

Without question:
Red or White beans
Sauce Piqaunte (alligator or chicken sausage)
Smoked brisket (and pulled pork for that matter)
Boiled Crawfish
And most likely Duck/Goose and Andouille gumbo

The above is based on folks that I have fed, but my list would be much longer.

Just go happened my wife brought home ham bone on Friday and cooked white beans today.

Girlfriend is half-Malaysian and makes an incredible coconut chicken curry. I've learned quite a bit from that dish and make it well.
