Check out a semi soft French cheese called Mimolette. Really nice.

Not sure I've ever had a cheese that I did not like. Kinda depends on the application. Even Velveeta and Cheez Wiz have their uses.

Put a slice of whole milk mozzarella on half of an everything bagel and put it under the broiler for 2 min. It will change your life.

Very low brow - Colby Jack. Melts well on things, melts well into a bechamel, good straight outta the fridge. I like a wide variety, but that's the first that comes to mind as my all around favorite.

Just a tad off-topic: a great snack/appetizer is feta and mushrooms washed down with a full-bodied red wine (we drink mostly Bourdeaux). A bite of feta, a small mushroom, then a sip of wine - simple and delicious.

Swiss. The aged big hole variety. It’s great cold, at room temperature, and melted. Each has its own characteristics.
