if I'm just eating cheese by itself, this is my absolute favorite. My answer would change if you asked me what is my fav cheese to put on a salad, sandwich, or maybe even spread on crackers.

Red rind hoop cheese. Non refrigerated. Goes good with souse and crackers.

Check out a semi soft French cheese called Mimolette. Really nice.

Agree on both accounts. I like most of them, but if someone told me I could only eat one cheese for the rest of my life, it would be sharp cheddar.

Not sure I've ever had a cheese that I did not like. Kinda depends on the application. Even Velveeta and Cheez Wiz have their uses.

Put a slice of whole milk mozzarella on half of an everything bagel and put it under the broiler for 2 min. It will change your life.

Very low brow - Colby Jack. Melts well on things, melts well into a bechamel, good straight outta the fridge. I like a wide variety, but that's the first that comes to mind as my all around favorite.

That's funny, I saw this thread title last night and the first cheese that came to mind was gouda. The older the better.

Just a tad off-topic: a great snack/appetizer is feta and mushrooms washed down with a full-bodied red wine (we drink mostly Bourdeaux). A bite of feta, a small mushroom, then a sip of wine - simple and delicious.

Grated Parmigian in the big bag from Costo. It has an earthy, nutty undertone that just puts me into ecstacy.

Swiss. The aged big hole variety. It’s great cold, at room temperature, and melted. Each has its own characteristics.

Holmes Cheese Co. in Millersburg, OH makes the best.
