A friend posed this question to me and I had a difficult time answering it immediately.

Understanding that there are different cheeses for different applications, the first to pop into my head was Gouda.

Yours?

Yellow American, Land O' Lakes or Boar's Head

I'll eat lots of different cheeses, but that's what I get for sandwiches (grilled cheese, chicken, burgers, etc.)

Parmigiano Reggiano hands down for a harder cheese, softer cheese would be stracciatella which is basically what is inside of a burrata ball.

If I had to pick a single cheese, irregardless of situationally context, to call my favorite it is the $2.99 log of chèvre with honey from Trader Joe’s.

There aren't many cheeses I don't like. But my all time favorite "go to" is a sharp cheddar.

I grew up exclusively using the green Kraft parmesan cheese.

The first time I grated my own fresh parmigiano reggianno was literally life changing. Haven't owned or used the green stuff in over a decade.

All the basic used in preparing meals, swiss, mozzarella, cheddar, parmesan etc, etc. . .
Favorite to snack on is creamy Havarti with a drizzle of honey on multi grain crackers.

Havarti for a snack.

American on a burger.

Bleu in a dressing.

Swiss or Provolone on a cold cut sandwich.

Mozzerella on a Pizza.
