What/How Often Do You Grill over Wood?

I grill mostly on a gas grill but I love almost anything grilled over wood. Tonight, grilling burgers over post oak on a BGE.
Curious what others' thoughts are.

I should probably do this more. Propane is just cheap and convenient

I use a combination of charcoal and wood on 80% of my cooks. Whether grilling, smoking, or smoke roasting.

We have one of those fire pit swivel grill grates and a ton of oak & hickory on our mountain property. So evey time we're up there, we grill over the pit. Gives the food excellent flavor.

I have a friend who ownes a ranch in south Texas. Being retired I spend at least a month sometimes two there in the winter. We pick up mesquite wood that has fallen on the ground. We let it dry out until the next year.
The bigger pieces we use in a fire pit , the smaller we use in a bbq pit as the only source of heat, Pile it up like a TeePee and let it burn down. Food taste great

I fire up my stick burner a couple of times a year when the weather is nice and I don't have anything else to do. I cook over an open fire a few times per year while camping.

All the time.
Sometimes I will mix some coals from a bag with split wood, but I really like the flavor. I've always grilled/BBQ'd over coals or wood. I'm over 40 and have never owned a gas or pellet grill. Just not my thing.
There are times where we want steaks with that cast iron crust sear, but also a bit of that wood flavor, so I'll just put the cast iron pans directly over wood to get both the flat crust and the flavor.
I know gas grills are convenient for quick and not much cleanup, but just never anything that's enticed me to buy and have for myself.

Ran out of charcoal a dozen or so years ago and haven't bought any since. Just firewood. So, everything. Multiple times a week on average, less so when it's damn 98 degrees.

Rarely use gas grill. Mostly lump charcoal and split wood. Couple times a week.

Ive done vegetables, tri tip, picanha, paella, stews in a dutch oven over my fire pit
