What can I cook for a vegetarian?

My son is bringing his girlfriend for Thanksgiving. She’s a vegetarian (not vegan) and she’s from the Northeast. We’re doing the usual turkey with all the fixings and also doing crawfish bisque. There will plenty side dishes suitable for a vegetarian, but what can I cook for her for a main course - preferably something with a little Louisiana flair? I’ve never cooked for a vegetarian before.

Cabbage jambalaya, Black eyed pea casserole, Caprice salad with a good quality balsamic, Stuffed mirliton, or a stuffed artichoke.

Is she vegetarian or vegan? It’s a big difference. Make sure she’s not vegan instead.

It's a bit of work, but a good spinach lasagna works nicely. No meat, but a nice rich and thick red gravy and when you put it together toss in some fresh spinach leaves in the layers of noodles, sauce and cheese.

Fresh mushrooms work well in lasagna also. If you're in the BR area, look for places that sell "Mushroom Maggie" mushrooms. They are grown locally.

Eggplant parm or eggplant lasagna should work.

Having hard boiled eggs available is a good source of protein.

Red beans and rice minus any meats, but well seasoned. Same with white beans and rice. You could have some fried eggplant rounds on the side for another texture.

Some vegetarians eat fish/seafood. If she eats fish, lima beans and shrimp would be good.

Red beans with no sausage. You can season the hell out of just beans.

Not cajun, but my favorite vegetarian dish is Japchae a Korean noodle dish with sweet potato noodles and vegetables.

I like the macque choux suggestion, and I think something simple like field peas would also work.

The Dressing, Vegetable Casseroles and Other sides are better than the turkey usually. Wouldn’t change what I’m doing much.

My first thought as well.


With all the traditional southern sides at Thanksgiving (sweet potato, dressing, green bean casserole, squash casserole, mashed potatoes, etc, etc), I wouldn’t go out of my way much.

Agreed - I’d be brushing up on all the crazy right wing shite out there that I could use to carpet bomb her at dinner.

here is my go to, it never disappoints and others wind up eating it too

Roast some assorted veggies on a sheet pan tossed with olive oil, salt/pepper and cavenders. Cherry tomatoes, squash, zucchini, eggplant, peppers, red onion, garlic, mushrooms etc

Make a batch of couscous

put the couscous in a bowl, veggies on top, goat cheese if she’s not a vegan, drizzle with olive oil and balsamic vinegar

My vegetarian cousins eat sweet potato casserole, mac and cheese and bread at holidays and any green vegetable we prepare without bacon added.
