Battered or double fried on just about any cut is a plus for me. Peanut oil is probably my favorite. I don't know that ive had tallow or duck fat fried as mentioned here but that Sounds lovely. Most ideal is a crispy exterior with a soft interior. Curly fries have a special spot in my heart. Waffle fries can be good too.
I don't know that sweet potato or tater tots really count but both are also excellent.
As for specific locations fries, I dont really eat out anywhere consistently enough to have a spot but Popeyes and checkers/rallys are usually good.
If given the choice in an unknown restaurant im probably going to go tator tots. While the ceiling for tots is below that of fries, the floor of tots is significantly above that of fries.

I usually get Roots Farm Fresh French Fries, Potato Wedges and Crispy Tots from Sprouts to make in the air fryer.

Can't believe it hasn't been mentioned yet, but matchstick or shoestring are by far my favorite. Freddy's are usually a little too salty, but J Alexanders are always great.

I like them all if hot, and I have some ketchup+hot sauce to dip them in. The Whataburger spicy ketchup is great.
My least favorite are the real skinny ones that you get from Steak n Shake, The best ones around here come from City BBQ and Cue, with the absolute best from The Po Boy Shop in Decatur. Their fries are freshly made waffle fries with a hint of cajun seasoning.

I used to go to Fatburger just for the fries when I lived close to one. They had skinny, fat (steak), and sweet potato fries. The skinny and fat fries were money. Never tried the sweet potato fries.
