Recipe? And where the hell do you buy duck wings?

Chicken wings are my jam. I've had, and enjoy, duck breast but would love to try duck wings.

Great looking menu, btw. The boudin stuffed chop sounds incredible.

Same here. Bone in prime rib about 8 lbs. Frenched for presentation. Will smoke and reverse sear after a 24 hour brine. Various sides like roasted vegetables, green bean casserole, mashed potatoes

And and turkey as well.

Any particular reason for the Icelandic dish?

My best friend got married in an ice cave in Iceland and they do a lot of Icelandic traditions for Christmas.

I'm doing a German feast tomorrow: wiener schnitzel, German sausage (shipped in from W. Texas), sauer kraut, warm potato salad (dill/vinegar/bacon), pickled beets.

I don't have a whole lot of German lineage, it's just something different to do.

FIL showed up with a 2007 Caymus. Had some German beers, as well. Nap time.
