Seafood gumbo for us. We do the big spreads for Thanksgiving and New Years but Christmas Day it's just a big pot of seafood gumbo and tons of pies.

We don't have a big Christmas dinner. We have a big party with heavy cocktail food on Christmas Eve. We have a big breakfast mid morning on Christmas Day and then gumbo Christmas night. It's a marathon.

Brisket, roasted potatoes, rice dressing, green beans & pecans, pistolettes, and I'm still looking for another side. Dessert will be a Chantilly cake from Whole Foods (birthday cake).

That's more carbs in one sentence than I see you eat all year.

Darla - Birthday Cake

For Jesus?

The phlebotomist at the warfarin clinic asked me last week if we cooked a birthday cake for Jesus to go with with our Christmas meal. She said her mom always did.

Touched me. I thought it was nice.

We're doing a more less traditional Christmas dinner here this year. Doing my "Nathan's Corn and Redfish Bisque", lassagne, green bean and artichoke casserole, fried eggplant, salad and probably an endless list of desserts.

I'm in charge of spinach madeline, shrimp and grits casserole, and white chocolate bread pudding with raspberry sauce.

Not sure what else will be served, but one thing is for sure there will be way too much. Always is.

For some complicated reason, we are having both seafood and chicken gumbos, ham, glazed carrots, crab casserole, and mashed potatoes. None of that makes any nutritional or culinary sense, but I’m not hosting and will be bringing (by request), roasted garlic cheddar mashed potatoes. Whatever, it will all taste good and peace will reign. No one will die of scurvy due to a single unbalanced holiday meal. Hopefully no toy-induced trips to the pediatric ER like last year.

Merry Christmas to all the cooks and eaters.
